Food Safety Experts Warn of Growing Risks as Outbreaks Spread

The United States is currently dealing with a record-breaking outbreak of a parasite called cyclospora, which causes severe diarrhea. According to reports from NPR, there are now more than 4,100 confirmed cases across the country. This health crisis is raising serious questions about the government’s ability to keep the food supply safe. Experts in public health say that recent budget cuts and a loss of staff have made it much harder to find the source of these infections and stop them from spreading further.

Food safety in the U.S. relies on a network of state and federal agencies working together. A key part of this system is the FoodNet program, which is run by the Centers for Disease Control and Prevention (CDC). FoodNet was created to track illnesses and help officials act quickly when a problem starts. However, KFF Health News reports that the current administration has made large cuts to public health funding. These changes have forced agencies to stop the mandatory tracking of several dangerous germs, including cyclospora and listeria, a bacteria that can be deadly.

Bill Marler, a lawyer who specializes in food safety, told KFF Health News that these changes are dangerous. He explained that by stopping the tracking of these illnesses, the government is essentially allowing outbreaks to continue without being fully understood. He warned that this will inevitably lead to more people getting sick. Other experts agree that the system is under great pressure. Bob Custard, an environmental health expert, compared the current situation to a house where someone has removed the smoke detectors. He noted that without these warning systems, it is impossible to know when a fire—or in this case, a health crisis—is starting.

At the local level, the situation is becoming even more difficult. Many health departments are struggling with a lack of workers. NPR reports that in some areas, the number of people working in food safety has dropped significantly. In one West Virginia county, the number of full-time sanitarians—people who inspect food businesses to ensure they are clean—was cut in half. Because of these shortages, some states have even lowered the education requirements for these important jobs. This means that people with less training are now responsible for complex tasks like investigating food poisoning.

Sarah Sorscher, who works for the Center for Science in the Public Interest, told NPR that these delays and the lack of clear information are symptoms of a system in crisis. She explained that when local departments cannot report data, that information does not reach the state or national levels. This creates a gap in knowledge that leaves the public confused about what food is safe to eat. The lack of staff and funding means that regulators are still struggling to contain the cyclospora outbreak even months after it began.

Despite these concerns, the Department of Health and Human Services (HHS) denies that the staffing cuts have made the country less safe. They argue that the ability of investigators to do their jobs has not been affected by the recent changes. However, many in the scientific community remain worried. Neal Fortin, a director at Michigan State University, noted that it is already very hard to identify outbreaks like listeria. He said that seeing these programs cut from mandatory surveillance is deeply disturbing because of how dangerous these illnesses can be.

Looking ahead, there is growing fear that the next outbreak could be much worse than the current one. The food safety system was designed to protect the public from dangerous pathogens—microscopic organisms that cause disease. By weakening the network that monitors these threats, experts believe the country is leaving itself vulnerable. As the number of cases continues to rise, the debate over how to fund and organize public health agencies is likely to grow louder. For now, the public is left to navigate a food safety landscape that many experts describe as weakened and understaffed.
